Make it Monday, What's for Suppa?
Tonight I am using up more of the baby spinach I got at the market. Turkey burgers with feta and spinach served with sliced red onion, fresh tomatoes on Multi Grain Sandwich Thins, and homemade Tomato Soup.
Weight Watcher Turkey Burgers, with Spinach and Feta
6 points, 4 servings
1 pound ground turkey
1 tsp salt
1/4 tsp pepper
3/4 cup crumbled feta
5 oz. fresh spinach
Combine all ingredients, mixing by hand is best.
Heat non stick skillet to medium high.
Spray with non stick spray, cook burgers 5-6 minutes each side.
Serve with sliced tomatoes, onions and other burger condiments.
|My version is 28 ounces of turkey, spinach was sauteed with olive oil and garlic, then chopped.|

Weight Watcher Creamy Tomato Soup
4 points, recipe makes 4 servings of 1 1/4 cup
2 tsp extra virgin olive oil
1 medium onion, chopped
2 medium cloves garlic, minced
4 large fresh tomatoes, coarsely chopped
1 cup reduced sodium chicken broth
4 tsp fresh thyme or 1 tsp dried
1/4 tsp pepper
3 cups fat free skim milk
1/4 cup tomato paste
Heat oil in non stick skillet over medium heat.
Add onion and garlic, cook stirring until softened, about 5 minutes.
Stir in tomatoes, broth, thyme, salt and pepper.
Cover, simmer about 5 minutes. Cool 5 minutes.
Puree in batches in blender. return to a medium to large saucepan.
In a small bowl, whisk together milk and tomato paste. Pour into saucepan of soup ingredients. heat for about 5 minutes. Serving size is 1 1/4 cup.

It took me longer than the prep time suggested on the recipe, but it was worth it in the end. Fresh tasting food, mostly all fresh ingredients, so satisfying.
